Character: White rhombic crystal or white crystal powder, easily soluble in water, almost insoluble in ethanol. Its solution is acidic.

Usage: In food industry, in food industry, it is used as buffering, character improving agent, emulsifier, nutrition supplement, antioxidant additive, brine penetrable agent, sugar clarifier, stabilizer, coagulant and fowl scalding agent.
